How Long You Actually Need to Preheat

Here are real numbers, not vibes. Get your oven running at its highest setting with the stone already inside (never heat an empty oven and drop a cold stone in later, the temperature shock can crack it).

  1. Let the oven run 15 to 20 minutes until the dome or air reading hits your target, usually 900 degrees F for high-heat ovens built for 60 to 90 second pizzas.
  2. Keep it running. This is the step almost everyone skips. Give the stone another 20 to 30 minutes beyond that first reading. The stone needs time to soak up and hold the heat that the air already has.
  3. Check the actual stone surface with an infrared thermometer if you have one. You are looking for 700 to 800 degrees F on the stone itself, not just a good dome reading.
  4. If you do not have an infrared thermometer, budget 45 minutes total preheat time before your first launch. It feels like forever. It is not optional.
