Why Your Dough Glues Itself to the Peel

Dough sticks for one reason, and that reason is water. Raw dough sitting on a surface keeps giving off moisture from the bottom while it soaks up moisture from everything you pile on top of it. Sauce, fresh mozzarella, and any vegetable with water in it all drain downward.

That moisture dissolves whatever flour you dusted underneath. What started as a dry layer of separation turns into paste, and paste is glue. The semolina holding your pizza up two minutes ago now cements it down.

Time is the multiplier here. Most pizza makers find they get about two minutes from the moment the dough hits the peel before sticking turns into a real risk, and past five minutes you are usually committed to a calzone.

Your dough does not stick because you did something wrong. It sticks because it sat there long enough to get wet.

How to Launch a Pizza Without It Sticking

Here is the fix, in order.

  1. Wipe your peel with a dry towel before every single pizza. Peels pick up moisture from sauce drips, from steam, and from the pizza you just launched. A damp peel turns your dusting flour into glue before you even start.
  2. Dust with semolina, not cornmeal. Semolina (coarsely ground durum wheat that feels like fine sand between your fingers) rolls under the dough like tiny ball bearings. Cornmeal scorches and turns bitter well below your working temperature of 750 to 900 degrees F, and it leaves black specks on the bottom of your crust.
  3. Use a light dusting, not a snowbank. You want just enough semolina that the dough slides freely, and no more than that, because the excess dumps onto the stone and smokes.
  4. Prep every topping before the dough touches the peel. Sauce ladled, cheese torn, basil picked. The clock starts the second the dough lands, so you cannot go hunting for anything.
  5. Shimmy before you top, and shimmy again before you launch. Give the peel a small back and forth shake. If the whole base slides, you are clear. If a spot grabs, lift that edge with a bench knife and push more semolina underneath.
  6. Launch flat, fast, and committed. Hold the peel almost level with a slight downward tilt, get the far edge of the pizza over the back of the stone, then pull the peel straight back while you keep that gentle jiggle going. One motion. Hesitation folds the pizza.

Wood, Metal, and How Wet Your Dough Is

Two things nobody mentions when you buy your first peel.

First, wood and metal behave differently under raw dough. Wood is porous, so it pulls a little surface moisture off the dough and grips dusting flour in its grain. Aluminum does the opposite, and condensation can form underneath the dough while it sits. Most pros launch on a wooden peel and keep a thin metal one for turning pizzas and pulling them out.

Second, hydration changes the whole equation. Dough hydration (the ratio of water to flour, written as a percentage) usually runs 60 to 65 percent for home pizza ovens. Go above that range and the dough turns noticeably tackier on contact, so it needs more semolina underneath and a faster launch than a stiffer dough would.

Can I use regular flour on my peel instead of semolina?

Yes, and it beats using nothing. Plain flour is finer, so it absorbs moisture faster and turns to paste sooner than semolina does. A 50/50 blend of bread flour and semolina is a solid middle ground.

My pizza is already stuck. Can I save it?

Sometimes. Slide a bench knife or a thin spatula under the stuck section, lift it just enough to break the seal, and work semolina into the gap. Then launch immediately, because that dough only gets wetter from here.

Why does my second pizza stick when the first one launched fine?

Your peel got wet. Sauce, steam, and leftover flour build up fast. Wipe it dry between every pizza and re-dust from scratch.

Does parchment paper hurt the crust?
