How to Stop Pizza Dough From Shrinking Back
Here is the actual fix, in order.
- Pull your dough out of the fridge 1 to 2 hours before you plan to stretch it. Cold, tight gluten is the single biggest cause of shrink-back, and there is no shortcut around letting it warm up.
- Keep it covered at room temperature the entire time. A dry skin on the dough will tear before it stretches, which just creates a second problem on top of the first one.
- Ball your dough early and let it rest as individual portions, not one big mass. Gluten relaxes faster in a smaller, already-shaped piece than in a slab you have to divide right before you cook.
- If the dough still resists after warming up, stop pulling on it. Set it down, cover it, and walk away for 10 to 15 minutes. The gluten needs that time far more than it needs your persistence.
- Use your knuckles and the back of your hands to stretch, not a rolling pin. A rolling pin compresses the air out of the dough and re-tightens the gluten you just spent an hour relaxing.

Below that range, dough is stiffer and more elastic, meaning it develops gluten strength quickly but resists stretching. Above that range, dough gets softer and more extensible, meaning it stretches more easily but gets stickier to handle.
If you are working with a recipe under 58 percent hydration and fighting shrink-back constantly, that stiffness is working against you before you even touch the fridge. A dough closer to 62 to 65 percent hydration will still need its rest time, but it will fight you noticeably less once it gets there.
Wetter dough is not sloppier dough. It is dough with more room to stretch.
